Tandoori Chicken Rolls

Chicken rolls with leftover chickenEver wondered how to use the leftover Tandoori chicken you ordered for the party the previous night? Here is an easy chicken roll that will leave you wanting for more.

Very easy to make and so tasty that I have started ordering more food than required so that I can save some leftovers which I can pack into this snack the next day. Its a perfect snack for kids too esp for lunch boxes.

You can make this dish with grilled chicken, any kind of kebabs, paneer tikkas etc.

Here is my recipe for jhatpat tandoori chicken rolls.

Ingredients
Leftover tandoori chicken – 1 cup
Chapatis
Finely chopped onions
Finely chopped tomatoes
Finely chopped coriander
Iceberg Lettuce – shredded into pieces

Sauces – Tomato ketchup, Sriracha sauce, Garlic Mayonnaise
Egg
Oil, Salt and pepper

Method

  1. Remove the bones from the leftover chicken and shred the meat into bite sized pieces. Saute it lightly in a pan till hot and keep aside.
  2. Make chapatis or you can use leftover chapatis too
  3. Break an egg in a bowl and whisk it. Add some salt and pepper.
  4. Heat a pan/tawa and spread 1 tsp oil on the tawa. When the oil is medium hot, add the egg to form a circle. Now cover the egg with the chapatis when the egg is still wet and press lightly so that the egg sticks to the chapatis
  5. Heat this for 3-4 mins or till the egg is cooked. No need to flipover the chapatis.
  6. Now assemble the roll. Take one egg layered chapati – add spread the sauces that you like on it. I added Sriracha sauce. I had some garlic mayonnaise and I added that too. You can try tomato ketchup, green chutney, mustard sauce here.Chicken rolls with leftover chicken
  7. Add iceberg lettuce, finely chopped onions, tomatoes, coriander leaves and the chicken. You can sprinkle some lime juice or chat masala to make it tangy. Add some finely chopped green chillies if you like your rolls to be spicy.
  8. Roll it tightly and serve. You can cover one end with aluminium foil to keep it together and to avoid the filling from falling.

Variations
You can also make the roll with maida but I prefer wheat chapatis as they are healthier. For maida roll – Just take 1 cup maida, add water to it to get a soft dough like consistency. Make small balls and roll it out into flat breads with rolling pin and then fry on a  tawa.
